How to use a grill bucket

Updated: 23 October 2026

You are about to light a small charcoal pail or lift a cup of fat from a pellet grill, and how to use a grill bucket depends on which object you are holding. A charcoal bucket is an open fire you set outdoors and cook on once the coals are ashed. A grease bucket is a catcher you empty only when the cooker is cold. Water beside charcoal is the wrong response to burning fat, so these steps keep the two jobs apart. The [grill bucket comparison](/hub/grills-and-barbecues/grill-bucket) ranks the products. This follows public UK guidance, not a lab test.

If it is a charcoal bucket

Put the bucket on bare ground, clear of fences and sheds. Devon and Somerset Fire and Rescue Service warn against barbecues on balconies, decking, in a tent, or in a garage, and a small pail counts as that fire. The NHS says charcoal gives off carbon monoxide you cannot smell, so skip a closed canopy. Keep water or sand nearby for stray embers. That water is the wrong tool on burning fat. Spread about 5 cm of charcoal. On a grate about 30 cm across, a deeper bed gives heat you cannot turn down. Light it with firelighters or a chimney starter. If it fails, wait until it is cold, and do not pour petrol on coals that have already been lit. Cook when grey ash covers a glow, and probe burgers, sausages, chicken, pork, and kebabs to 75°C. Leave the ash until the metal is cool.

If it is a grease bucket

Empty a grease bucket only when the pellet grill is cold. Traeger's UK cleaning notes say to tip the fat into something you can throw away, not a sink or a gutter. Lifting a warm cup off a hot barrel can spill fat on the deck. Scrape what has set into a lined caddy for the bin. Thames Water says cooled fat still sets in the pipe. Line the cup only as the manual tells you. A blocked drain tube can turn the next cook into a grease fire. Clear the tube while the grill is cold. If a new cup never sits under the spout, the pellet grill grease bucket page covers Traeger and Pit Boss fit.

Where the two jobs must not be mixed

Water or sand beside charcoal is for stray embers. On a grease fire, Traeger's guidance is to leave the lid closed and keep water off the fat, because a jug on burning oil can throw flames out of the cup. Shut the lid if the chamber flares, and smother only embers that have spilled off the charcoal grate. Do not tip hot ash into the grease bucket. Ash stays hot after the glow fades, and a thin liner will melt. If you are unsure which object you bought, read grease bucket or charcoal bucket before you light it.

When to stop

Call 999 if the fire has left the grill, if you cannot close the lid on a grease fire, or if clothing has caught. Do not carry a flaming bucket indoors. Do not soak a pool of burning fat. If someone has a headache, feels sick, or seems dizzy after cooking in a closed space, get them into fresh air and use NHS 111 unless it is a 999 emergency. A cup that misses the spout is a buying problem. The checklist is the grill bucket buying guide.

Common questions

How deep should the charcoal be in a small bucket?
About 5 cm. Devon and Somerset Fire and Rescue Service give that depth for a barbecue. On a grate about 30 cm across, a deeper bed leaves heat you cannot turn down. If the maker prints a fill line on a wider pail, use that line.
How do I know the coals are ready?
They are ready when grey ash covers a glow underneath, without tall yellow flames still climbing the pile. BBC Good Food puts that stage at about 20 to 30 minutes. Patchy ash needs more time. Burgers, sausages, chicken, pork, and kebabs still need 75°C in the centre.
Can I use petrol if it will not light?
No. Let it cool and start again with approved firelighters or a chimney starter. BBC Good Food and UK fire-service advice reject petrol on a barbecue, including a second pour onto coals that look dead. White spirit on a warm bed is the same hazard.
When do I empty a grease bucket?
Empty it only when the pellet grill and the cup are cold. Traeger's UK cleaning notes say to put the fat into something you can throw away, not while it is still warm enough to run. If you cook most weekends, check the cup on a cold grill before it overflows.
Can cooled fat go down the sink?
No. Thames Water asks households to keep fats, oils, and grease out of sinks and drains. Cooled fat melts again in a warm pipe. The outside gully and the toilet cause the same problem. Scrape the cup into a lined caddy for the bin.
What if the pellet grill is on fire?
If the fire is in the grease system, close the lid and do not pour water on it. Water on burning fat can throw oil out of the cooker. Switch the grill off if you can do that without reaching through flame. If the fire spreads beyond the grill, move people away and call 999. Do not carry a hot bucket indoors.
Where do hot ashes go?
Leave them in the charcoal bucket until the metal is cool, which can be many hours after the glow has gone. Do not tip warm ash into a plastic bin, onto dry grass, or into a pellet-grill grease bucket. Once it is cold, it can go into a metal container if your council accepts it. Cover an open pail against rain only after the fire is out.
