How to clean a charcoal barbecue: warm grate, cold ash

Learn how to clean a charcoal barbecue after cooking: scrape the warm grate, empty cold ash onto bare soil, and dry the bowl before the cover goes on.

The grate is black with glaze, and the pan under the column is still full. How to clean a charcoal barbecue uses two clocks. Scrape the cooking grate while it is still warm, with foil or a bristle-free brush, which is how BBC Good Food does it. Leave the ash until the bowl, the column and the pan are cold. Weber UK says wet ash ruins a barbecue.
Which? separates a clean after every cook from a deeper clean about every three months. Charcoal is the fiddlier fuel because of the ash. On a pedestal that ash drops into a pan, and the coal grid is often zinc-plated even when the bowl is sold as stainless. Your manual still wins.
In short
Scrape the warm grate with foil or a bristle-free brush. Empty the ash only when the barbecue is cold, onto bare garden soil, and dry the bowl, pan and grate before any cover goes on. The zinc-plated coal grid is not the stainless bars your food touched.
Leave the ash until the barbecue is cold
Clean the grate while the bars are warm. The ash, the bowl and the column wait until they are cold. Weber UK quotes a charcoal collector who dumps the ash once the barbecue has cooled, then washes the bowl with soap and water the next day. Rain on a full pan, or a hose into a warm bowl, makes the paste that ruins the metal.
GOV.UK's outdoor fire-safety leaflet, marked for England, says cool the barbecue before you move it, and put ash on bare garden soil. Hot ash in a dustbin or wheelie bin can melt the plastic and start a fire. It is not a Scotland, Wales or Northern Ireland statute, though the fire risk in a plastic bin is the same. Your council still decides how cold ash is collected.
Grey powder is a weak clue. Ash insulates, so a lump underneath can stay hot, and these notes give no universal number of minutes. If the bowl or pan still feels warm, wait, and leave the barbecue outside. A fuller check sits in our guide to when barbecue ash is safe to move.
A hose belongs on cold metal, after the ash is out. Water on a hot porcelain kettle or a thin steel bowl shocks the metal. Keep water, sand or a hose nearby for a spreading fire. That is an emergency, not the end of a cook. A kettle can finish with the lid shut and the vents as the maker describes. An open pedestal cannot. Carry neither indoors while the fire bed is warm.
How to clean a charcoal barbecue grate
BBC Good Food cleans the grate while it is still hot, with a ball of foil or a bristle-free brush, because a wire brush can shed steel splinters onto the bars. A dark, smooth grate is a finished clean. A bright grate with a bristle on it is not.
The Weber collector's heat trick needs a lid. He runs the barbecue very hot for about 5 to 10 minutes so debris carbonises, then uses a steel wire brush. Our Weber charcoal barbecue guide shows how a lidded grill differs from an open column. Copying the wire brush onto a pedestal ignores the missing lid and the BBC warning. Check the head for missing wires, then look along the bars.
Which? still wants the grill cleaned after every use. Lift glaze, loose carbon and fragments. A stable dark patina can stay. Sticky marinade, flakes of old food and a curl of foil need to come off.
- Let any flame across the bars die back until you can hold tongs steadily.
- Scrub the hot bars with foil in the tongs, or with a bristle-free brush.
- Lift the grate with a grate tool or a protected hand if you need the other face.
- Check the cooking side for foil flakes or a shed bristle before food goes back on.
Chrome and enamel mark if you grind them. The Tepro Chill & Grill Cube listing describes a chrome grate, so keep the foil light. Our Tepro charcoal barbecue comparison separates that cube from the larger trolleys and kettles. Follow the manual if it forbids metal tools. Which?'s roughly three-month deep clean is a separate job, timed in how often to clean BBQ grates.
Empty the ash pan down the column
A pedestal is a fire bowl on one column. Air enters low in that column, and spent fuel falls into a pan at the base. That shape is what our stainless steel pedestal barbecue comparison is built around. There is no lid-down burn to borrow from a kettle, and a hose from above sends wet ash into the vent. When the barbecue is cold, work in this order.
- Slide the ash pan out at the foot of the column, outdoors, over soil or a metal container.
- Empty the cool ash onto bare garden soil, the route in the GOV.UK leaflet for England.
- Brush loose dust off the coal grid and leave intact plating alone.
- Clear the vent. Damp ash there starves the next fire of air.
- Wipe the pan and the column dry, then refit the pan.
A kettle holds ash in the bowl until you clear a catcher or a damper. Dump it once the fuel is cold, and free a fused lump only with the grate and grid already out. Stop if the bowl is cracked, the column rocks, or the pan will not come out. Some amazon.co.uk pedestal titles disagree with their own size tables, so a spare pan from another listing is a weak fit.
Soap on stainless, a light hand on plating
Stainless on the bowl does not name the coal grid. In our pedestal comparison the AUUIJKJF listing, ASIN B0D6N45V82, was £154.74 on 15 October 2026 and states a stainless body with a zinc-plated charcoal grid of 30 cm. tepro's Vista specification also states a zinc-plated coal grid. The BOWEKAM at £171.58 does not state the coal-grid material. Neither amazon.co.uk row had a star rating or a review count that day.
Wash a cold stainless bowl with warm soapy water, then rinse and dry it, which matches the Landmann care note sold through Debenhams. Char-Broil UK says concentrated bleach and other chlorine cleaners cause rust spots. Humidity and salty coastal air do similar damage. Orange specks are often iron particles from steel wool, so leave bleach and steel wool in the cupboard.
Brush loose ash off a sound zinc-plated grid once it is cold. When the plating blisters and flakes into the fire, replace the grid. A grease fire can darken stainless and still leave the metal intact. A magnet will not tell you the grade. Use the cleaner the manual names, and skip any bottle whose label lists chlorine or bleach.
Dry it before the cover goes on
Dry the grate, the coal grid, the bowl, the ash pan and the column before a cover goes on. The Landmann note treats that dry as the condition of storage. On a pedestal, the vent is clear, the pan is empty, and the cover goes over cold metal. Closing vents for winter is a lidded-grill habit.
Wipe under the bowl rim and inside the pan. An hour on a breezy day is a fair rule of thumb when the metal was properly wetted. A cover drawn over a soapy, dripping bowl holds that moisture against the steel overnight, which in a British autumn marks a zinc-plated grid and leaves tide marks on stainless.
A thin wipe of cooking oil on a clean, dry cooking grate can help the next meal release. Follow the manual if a coating must stay dry, and leave the coal grid unoiled. A heavy coat smokes on the next light. Before the first cook after winter, look for pests, mould, loose rust and a vent filled with blown ash. Flaking plating, a split bowl or a column that no longer stands square means you replace the part or retire the barbecue.
