How to light a charcoal barbecue

Updated: 23 October 2026

You already own a charcoal grill, the food is ready, and the fire will not catch without drama. This page is how to light a charcoal barbecue outdoors, hold the heat with vents, and shut it down without petrol, an enclosed space, or hot ash in a bin. The Products Compared editorial team wrote it on 21 October 2026 from UK public guidance and Weber UK’s charcoal notes, cross-checked against limits in these listings. We did not time these ASINs on a patio. Buying choices stay on the [barbecue comparison](/hub/grills-and-barbecues/barbecue). Light it outdoors

Set the grill on stable ground outside. GOV.UK fire safety outdoors says never use charcoal indoors, in a tent, under an awning or in a caravan, and never light with petrol or paraffin. Keep a bucket of water, sand or a hose nearby. Fire England also advises against a balcony. The lease question sits on charcoal barbecue for a small space. Weber UK’s chimney sequence is the clean default: measure charcoal into a RapidFire-style chimney, put three lighter cubes on the coal grate, set the chimney over them, wait until flames show at the top, then pour the coals into the bowl. Their rule of thumb is that lump heats faster and briquettes stay hot longer. Without a chimney, build a pyramid of charcoal, nest lighter cubes underneath on cold coals, and wait. ProQ’s UK notes put that wait at about ten to fifteen minutes until the coals turn white, with bottom vents open while you light. Do not cook while cubes are still flaming through the pile. Wait until the charcoal has an ash coating and the cubes are consumed. Recognised lighters only, and only on cold fuel. If a vent or rack has already melted, stop using that grill. One Kendane UK review reports that after a single cook.

When the coals are ready

Ready means a light grey ash coat across the top of the bed, not a few flames in the middle. GOV.UK’s outdoor note puts charcoal depth at about five centimetres as a normal layer, not a deep pit. Spread the coals for direct heat, or bank them to one side for an indirect zone once you have a lid. Preheat with the lid on and vents open for about ten to fifteen minutes on Weber UK’s kettle guidance before the food goes down. Food temperature and barbecue temperature are different; a lid gauge reads chamber air, not the middle of a burger. An open grill with no lid, such as the Amig, never gets that closed preheat. You still wait for ash, then cook in the open and accept more wind loss.

Vents and the lid

Weber UK treats three levers: fuel amount, airflow and the lid. Start with both vents open. Make small changes, then wait about five minutes. Their published bands, high heat with vents fully open, low and slow with the lid vent about one-eighth to one-quarter open, are starting points from Weber, not lab readings of these ASINs. Do not close both vents while cooking. Closing both is how you starve the fire at the end, not how you roast mid-cook. If your bottom vent sits inside the bowl and only moves when cold, as a HOMION kettle review describes, set it before you light. You will not trim that inlet safely once the drum is hot. More fuel raises the ceiling; more air raises the rate. Lid on holds the chamber. Lid off dumps heat and smoke into the wind. A grill with no lid cannot use that vent table. You are managing an open fire only.

Shut it down

When the cook is finished, close the vents to starve the fire and leave the grill where it stands until everything is cold. GOV.UK says cool before you move the barbecue, and put ash on bare garden soil, not into a wheelie bin. Fire England separately says to extinguish charcoal fully with water. That is their line, so do not blend it into the GOV.UK sentence as if both pages said the same thing. Never bring a smouldering bowl indoors to finish cooling. Carbon monoxide has no smell. If the fire escapes, or you cannot stop it, or anyone shows signs of carbon monoxide illness, call 999 or 112. If metal softens, paint lifts into the food zone, or a stand collapses, stop using the grill and use the seller plus Citizens Advice in England and Wales, Advice Direct Scotland, or your Northern Ireland council for a safety report. Which grill to buy was an earlier decision, on the charcoal barbecue buying guide.

Common questions

Can you light charcoal without a chimney?
Yes. Build a pyramid on cold coals with lighter cubes underneath and wait for a white ash coat. A chimney is faster and cleaner, which is why House Of Home reviewers miss one, but it is not mandatory.
Should you cook while lighter cubes are still burning?
No. Wait until the cubes are consumed and the charcoal is ashed. Cooking through active lighter flame adds smoke and uneven heat you do not need.
What if the grill has no lid?
Light and ash the same way outdoors, then cook in the open. You cannot use closed-lid vent control. Accept more wind and a shorter hot window.
Where do the ashes go?
On bare garden soil once they are cold, according to GOV.UK. Do not tip hot ash into a wheelie bin. Fire England’s water-extinguish advice is a separate instruction if you choose that method.
Can you revive a dying fire with petrol?
Never. GOV.UK and Fire England both ban petrol and paraffin on barbecues. Add dry charcoal to hot coals, or relight properly with cubes on a cold bed.
