How to use a gas plancha

Updated: 23 October 2026

The green patio-gas bottle is beside a cold three-burner plate. How to use a gas plancha is a set order: fit the regulator the bottle takes, leak-test with soapy water, oil the surface, then run the three burners as separate zones. The [3 burner gas griddle comparison](/hub/grills-and-barbecues/3-burner-gas-griddle) sets Buffalo, Happy Garden and the Onlyfire cart next to each other. This page assumes the bottle and the plancha are already a matching pair. London Fire Brigade advice from April 2024 sets the boundary: change the cylinder outdoors, store it outdoors, and never leave the barbecue while it is lit. If the hose feels short, move the bottle. Do not lengthen it with a joiner.

Connect the right bottle before you open a valve

A green Calor patio-gas bottle uses a 27 mm clip-on regulator. That fitting is not a butane clip, a Campingaz coupling or a screw-on propane valve. Calor points you to propane rather than butane outdoors, and a 5 kg patio bottle is the size they describe for up to three burners. If the data plate asks for another pressure, stop before you open the valve. The 3 burner gas plancha buying guide shows that the boxes do not match. Buffalo's bullets include a regulator. Happy Garden does not list one. Onlyfire lists a lid and mentions a regulator only in a bullet, so check the part against the data plate. Clip it on with every knob off, and leave the cylinder closed until the clip is seated. If the hose will not reach, move the bottle rather than splicing on a spare length. If the clip will not seat, ask a competent person.

Leak-test and light the burners

Mix washing-up liquid into water and brush it over the regulator joint and the hose ends. Open the cylinder with the knobs still closed. Growing bubbles mean a leak, so shut the valve, reseat the clip and test again. If bubbles remain, stop and call a competent person. A match or the piezo is not a leak detector. Light one burner at a time, and hold the knob until that flame stays. If it will not catch, turn the knob off and wait before you try once more. Norfolk County Council asks for one person to watch the cook throughout. A smell of gas with the valve shut is a stop, not a cue to relight. Ventilate from upwind and keep flames away until someone competent has checked it.

Zones, oil and the food on the plate

Three knobs let one band run hotter than another. Leave the centre higher when you want a sear, and turn an outer burner down to hold food that is already coloured. Oil is a thin film, not a puddle. Onlyfire's UK reviews say to oil the plate before food goes on. Enamel and ceramic do not share one seasoning method, and some enamel makers treat the coating as the protection while still telling you to oil lightly. Follow the manual for your plate. Too much oil smokes and can flare on a hot spot. If the wind knocks the flames about, stop. Liquid Gas UK's Code of Practice 33 says to shut the cylinder, disconnect, and only then move an unstable appliance.

Shut down, cool outdoors and clean the coating

Turn the cylinder off first, let the flames die, then close the knobs so the hose empties. Norfolk County Council describes that order, and Calor says not to disconnect while the switch is still on. Leave the plate outside to cool. Do not take it into the garage, the kitchen or a shed. Scrape while the surface is warm, before the residue sets hard. Do not throw water on a hot plate, and do not use a wire pad on enamel. A harsh pad cuts the coating. Call a competent person if bubbles return, if you still smell gas with the valve shut, or if a control will not close.

Common questions

Which regulator fits a green patio-gas bottle?
A green Calor patio-gas bottle takes a 27 mm clip-on regulator, not a butane clip, a Campingaz coupling or a screw-on propane valve. These outdoor planchas are set up for 37 mbar propane, and Calor describes a 5 kg patio bottle for appliances with up to three burners. Read the data plate before you clip anything on. If the pressure or the fitting does not match, do not force an adapter.
How do I leak-test a gas plancha without a flame?
Brush soapy water on the regulator joint and the hose unions, then open the cylinder with the knobs still off. Growing bubbles mean gas is escaping. Shut the valve, reseat the clip and test again. If the bubbles continue, leave the gas off and call a competent person.
Do I season an enamel plancha like cast iron?
No single seasoning method covers enamel and ceramic. Some enamel makers say the coating is the protection, and they still tell you to oil lightly when you cook. Onlyfire's UK reviews ask you to oil the plate before food. Follow the manual for your plate. A thin wipe is the cook, not a curing project.
Why is the middle of a three-burner plate hotter?
Three burners are there to make zones, so the centre often runs hotter than the outer bands when all three are open. Use the middle for the sear, turn an outer knob down as a holding strip, and slide the food rather than waiting for one temperature. A burner that will not light at all is a fault, not a hot middle.
When do I turn the gas cylinder off?
Turn the cylinder off first, as soon as cooking is finished, and let the burners die before you close the knobs. That empties the hose instead of leaving it full of gas. Norfolk County Council describes that order, and Calor says not to disconnect while the switch is still on. If you only close the knobs, the hose stays charged.
Can I wheel the cart or cool the plancha in the garage?
Do not move a lit plancha, on wheels or on a table. If wind makes it unstable, Liquid Gas UK's Code of Practice 33 says to shut the cylinder, disconnect, and only then move it. Do not wheel it into the garage or carry a tabletop plate inside to cool. Store the cylinder outside. A warm plate in a closed room remains a fire risk after the flame has gone.
