How to use a rib rack without treating height as doneness

Updated: 23 October 2026

You have a rib rack, and you need to know how to use a rib rack without serving pork that only looks finished. Standing the slabs frees grate space. It does not tell you the middle is cooked, and glaze brushed on while the meat is vertical runs into the tray. This page is the cook: indirect heat, a look halfway, sauce off the wires, then the Food Standards Agency check. The listings are the [rib rack comparison](/hub/grill-accessories/rib-rack). A link there can earn us a commission at no extra cost to you. The method follows the Food Standards Agency and Food Standards Scotland pages cited here, plus review notes from this set.

Set the heat to the side, not under the wires

Put the rack over indirect heat, with a tray under it for the fat. On gas, the burners beneath the frame stay off and a burner to the side carries the cook. On charcoal, wait until the coals are glowing with a grey ash coating. That ash cue is the Food Standards Agency’s barbecue guidance. A wire in a direct flame scorches the strip that touches it, and the rest of the slab can still be undercooked. On a kamado, indirect means the deflector is in and the rack sits above it. That setup is on rib rack for a kamado. If a full spare-rib slab will not stand, the rib rack buying guide is the right page. A listing that says oven safe is a yes or no, not a temperature rating. A blank oven field stays on the barbecue.

Load the slots, then look again halfway

Stand the slabs so they do not fold over the top wire, with a gap so they are not steaming each other. If you cannot tell which side of the cooker runs hot, set the rack in the cool zone and plan to turn it. Rotate the rack, or swap outer slabs with inner ones, when one end darkens first. The look is for colour, not a decision that the pork is done. Oil the wires only when the listing says so. Mountain Grillers, KUNANG, and the unreviewed racks whose bullets say soak and oil are the ones that ask for a thin coat. Kamado Joe’s title says coating free, and a UK reviewer still found sauce running off it. If the supports are too short, trim the slab or cook it flat.

Sauce and wrap off the rack

Glaze at the end, with the slabs flat. Wet sauce on a vertical surface runs off, which is what a UK review of the Kamado Joe rack described. Pull the slabs, brush them on a tray, and put them back for a short set. A brand window of 5 to 10 minutes is a sketch, not a guarantee the sauce stays in the slots. Do not reuse marinade that has touched raw pork unless you boil it, which is the Food Standards Agency’s barbecue line. Foil tears on the wires if you wrap inside the rack. Wrap the slabs flat. Many cooks never wrap.

How you know the pork is cooked

The rack is a stand. The Food Standards Agency still wants pork cooked all the way through. One stated combination on the FSA cooking page is 70°C for 2 minutes, and that page lists other pairs. Without a probe, pork should not be pink and fleshy and the juices should run clear. Food Standards Scotland says 75°C or above. A bend in the slab does not replace those checks. Probe the thickest part, away from the bone, and wash the probe between slabs. A black edge over a cool centre means the rack sat too close to the flame. If you cook pork for paying guests under food-hygiene registration, use the Food Standards Agency and your local authority.

Common questions

Do the ribs go over direct heat or beside it?
Beside it. The wires sit in the cool zone, with the heat at the side and a tray under the fat. Direct flame scorches the contact line and leaves the centre behind. On charcoal, wait until the coals are glowing under grey ash. On a kamado, the deflector is what makes the zone indirect.
Do I flip or rotate them in the rack?
Look part-way through and rotate if one end is darker. Swapping outer and inner slabs does the same job. A full flip of each slab is in Weber’s US method, and Kamado Joe’s page says you need not rotate. Treat both as brand habits. The look is for even colour, not the doneness check.
When do I put the sauce on?
At the end, with the slabs out of the rack and lying flat, then back in for a short set. Sauce on vertical meat runs off, which is why a UK Kamado Joe reviewer lifted the slabs. Do not reuse marinade that has touched the raw pork unless you boil it. A fresh brush batch is the simpler habit.
Can I use the rib rack in the oven?
Only if that listing says oven safe, and the line is yes or no, not a maximum temperature. In this set the yes appears on Amazon Basics, the KUNANG title, Homeily, the VBOYL bullets, and Weber’s details. A blank oven field stays on the barbecue. The pork check is the same in an oven as on a kettle.
What temperature means the pork is cooked in the UK?
The Food Standards Agency gives 70°C for 2 minutes as one combination, with other pairs on the same page. Without a probe, the meat should not be pink and fleshy and the juices should run clear. Food Standards Scotland says 75°C or above. Probe the thickest part, off the bone, and wash the probe. A bend in the slab does not replace that.
