How to use a kettle barbecue

Updated: 23 October 2026

The kettle is built and you want the first cook finished before the smoke becomes the neighbour’s problem. Learning how to use a kettle barbecue is mostly patience: where you put it, how you light cold coals, and how you leave the vents once the food is on. Peter F. used Weber UK’s vent method, GOV.UK fire advice, London Fire Brigade guidance and Food Standards Agency temperatures. We did not fire these listings in a lab. Set it down before you strike a match

Put the kettle on flat paving, clear of the house, a fence, a tent and an awning. GOV.UK says not to light a barbecue indoors, in a tent, under an awning or in a caravan, and to keep water or sand nearby. You will not pour that water into a porcelain bowl. Weber UK says not to douse the coals. The bucket is for a stray ember. If you suspect carbon monoxide, get people into fresh air and call 999. If a neighbour complains about garden smoke, the council decides.

Light the charcoal and wait

GOV.UK describes about 5 cm of charcoal as enough to cover the base. Pile it loosely and tuck solid firelighters into the cold fuel. Napoleon’s UK notes say the lid stays off, the vents stay open, and you wait until the coals are ashed, often 15 to 20 minutes. Do not use petrol or paraffin, and do not spray lighter fluid onto coals that are already lit. A chimney is fair if you already own one. Weber UK warns against dropping unlit coals beside food that is nearly done. The BSDLZCH pan and the IRONMAX hibachi have no lid in the bullets, so the closed-lid steps do not apply to them.

Run the vents and a two-zone fire

Start with both vents open. After the food is on, use the lid vent for most of the trimming and leave the bowl vent as the inlet. Weber UK says small changes, then a wait of about five minutes. Do not shut both during the cook. Closing them is how you starve the fire afterwards. For chicken that would burn over a full bed, bank the lit fuel to one side. Sear over the coals, then move the food to the empty side and close the lid. If the lower vent is inside the bowl, as a HOMION review describes, you cannot run this method. That limit is in the kettle barbecue buying guide.

Check the food and put the fire out

A lid dial, even where the Original 47 cm bullets state one, is not the food temperature. When the plates are done, shut the lid and close the vents, and leave the kettle outside until the bowl is cold. Do not tip water through the enamel. Cold ash goes on bare soil, not into a plastic bin. If the vent never moved, or the grate arrived cracked, the fix is a return, compared on Weber kettle or cheap kettle. If you are still choosing diameter, use what size kettle barbecue.

Common questions

How do I light a kettle barbecue without petrol?
Use about 5 cm of cold charcoal, which GOV.UK calls enough to cover the base, and light it with firelighters or a chimney you already own. Keep the lid off and the vents open until the coals are ashed, often 15 to 20 minutes in Napoleon’s UK notes. Do not use petrol, paraffin, or lighter fluid on lit coals. None of these nine listings includes a chimney.
Which vent do I move first?
Open both to start. After the coals are ashed, Weber UK’s method is small changes and a wait of about five minutes, using the lid vent for trimming and leaving the bowl vent as the inlet. Do not close both while food is cooking. Close them when you want the coals to go out. If the bowl vent sits inside the drum, you cannot follow that method.
How do I cook chicken without burning it?
Bank the lit coals to one side and leave the other side empty. Colour the skin over the coals, then move the pieces to the empty side and close the lid. A 57 cm grate gives more room for that split than a 37 cm tabletop. Check the middle with a probe. A lid thermometer reads the dome, not the thigh.
How do I know a burger is done?
The Food Standards Agency wants the middle of burgers, sausages and kebabs cooked through, at 70°C for two minutes or an equivalent, with a clean probe. A lid gauge is not that reading. A whole steak can be rarer because it is not minced. If you have no probe, cut the burger and keep cooking while the middle is pink.
How do I put a charcoal barbecue out?
Close the lid and both vents so the fire runs out of air, then leave the kettle outside until the bowl is cold. Weber UK says not to pour water on the coals. The Smokey Joe’s damper is described as closing fully for the same cut. When the ash is cold, spread it on soil, not into a plastic bin.
Can I use a kettle barbecue on a balcony?
London Fire Brigade says no. Charcoal still produces carbon monoxide after the visible flame has gone. GOV.UK also rules out tents, awnings and caravans. A product highlight that mentions balcony cooking, including the House of Home line, does not change that. If the only space is a balcony, charcoal is the wrong fuel.
