How to use a pizza oven

Updated: 23 October 2026

You have a patio oven on the table, or the box is still taped, and the listing promised a pizza in about a minute. That minute starts only after the stone is hot. This guide walks preheat, launch and turn, then faults UK reviews already describe. Prices stay on the [patio oven comparison](/hub/grills-and-barbecues/patio-oven). Fuel and fit sit on the [outdoor pizza oven buying guide](/hub/grills-and-barbecues/patio-oven/sub/patio-oven-buying-guide). Peter F., DIY and tools editor, used those listings and public UK sources, not a timed lab cook. A qualifying purchase can earn a commission at no extra cost to you. Updated 23 October 2026.

Before you light it

Place comes before flame. A wrong place turns a first cook into a carbon monoxide or fire problem. Keep gas, pellets, wood and charcoal outdoors: not in a tent, under an awning, in a caravan or in the kitchen. The NHS treats enclosed fuel burning as a carbon monoxide risk. GOV.UK fire safety outdoors adds water nearby and ash emptied only when cold. Sit the oven on a stable, non-combustible surface. Ooni advises against a wooden table, and a US Q Pizza review in this scrape warns against plastic. Leave a clear peel path. Check that a gas hose is not kinked, and that a rotating Mimiuo mains lead is not draped across the hot body. A balcony bullet is not permission from the lease. If the freeholder bans open flames or bottles, stop before you light.

Preheat the stone, not the air

Bullets in this set often say about 10 to 15 minutes, then about a minute for the pizza. UK reviewers more often describe 15 to 30 minutes before the stone is ready. One NutriChef UK review needed about 20 to 30 minutes, then the turntable cook went quickly. Mimiuo gas owners often write 15 to 20 minutes. Those are owner notes, not readings we took. Ooni aims for a stone around 400°C on their ovens. That is not a figure for every ASIN here. Light gas with the regulator and hose you checked. Load the hopper as the manual describes, and expect to feed more pellets as you go. Do not launch after five minutes because a bullet said 60 seconds. A cool centre and a scorched rim is the usual result. If a lid gauge reads chamber air, treat it as a guide, not a stone reading.

Launch and turn

Launch fails more often from sticky dough than from a weak flame. Dust the peel with semolina or flour. Semolina is coarser and less likely to glue wet dough to the metal. Shake the peel. If the base does not slide, fix it on the board. Keep toppings light. Slide the pizza onto the hot stone away from the fiercest rear flame. One UK Mimiuo gas review says a 12-inch base does not really fit a 13-inch stone and that the flame at the back burns the near edge. Once the base has set, often after roughly half a minute, turn so the same rim does not sit in the flame. On a rotating NutriChef, let the turntable do that work when it runs. On the Mimiuo classic, you turn by hand because that series has no auto-rotate. A pale side with a burned rim means you launched too early or sat too close to the flame.

When to stop

Some faults mean you put the peel down and deal with the hardware. Stop for a lingering gas smell or a hose that has scorched. One UK Mimiuo gas review describes a hose fire at the coupling after five uses. Call a Gas Safe engineer for a burned coupling or fixed pipework. On pellets, a hopper lid that will not close is a draft problem. One UK Mimiuo classic buyer weighed the lid with a brick. Flame from the pellet drawer means shut down and cool. On the rotating Mimiuo, a turntable that never moves, or that only moves on a socket the listing hid, is a return if the weld is broken on first use. One UK review reported an electric shock from the stone when switched on. Unplug that unit. Cover the oven only when cold. If you are still choosing fuel, see gas vs wood pellet pizza oven.

Common questions

How long do I preheat before the first pizza?
Plan on 15 to 30 minutes from UK owner notes in this scrape, even when the bullet says 10 to 15. Wait until the stone is properly hot, not until the air near the opening feels warm. A 60-second cook claim is a once-hot figure.
When do I turn, and what if one side burns?
Turn after the base has set, then keep rotating so one rim does not sit in the flame. A pale side with a burned opposite rim usually means the pizza sat too close to the rear flame or the base was too large for the stone.
What if the dough sticks?
Stop the launch. Lift back to the board, add more semolina or flour, and shake until it moves freely. A stuck pizza folded into the stone wastes the preheat.
What if the gas will not stay lit or the turntable does not move?
Check the regulator, hose and bottle valve first. For a turntable that needs mains, plug it in only if your oven's design requires that and the lead is intact. A turntable that is welded broken on first use is a return, not a cooking tip.
When do I stop and get a Gas Safe engineer?
For a burned or melted coupling, a lingering gas smell, a regulator fault you cannot clear, or any fixed pipework. Do not keep cooking through a hose fire or a smell you cannot explain.
