How to use smoking dust

Updated: 23 October 2026

The dust in the maze caught, glowed for a minute, and went out before the cheese had taken any smoke. That is the usual failure with fine smoking wood dust, and it is usually moisture, an overfilled channel, or a draught, not a mysterious wood. This is how to use smoking dust outdoors in a generator, a tray, or a foil pouch, without turning a failed kamado story into a method. Maker guidance and the review notes in our [smoking dust comparison](/hub/grill-accessories/smoking-dust) were checked on 20 October 2026. Dry the dust before you blame the wood

Dust that has sat in a damp shed will not hold an ember, even when the bag says oak. ProQ's generator guide says to dry damp dust before you blame the smoker: about 30 seconds in a microwave, or a low oven around 90°C for about 30 minutes, then let it cool before it goes near a flame. That tip belongs to their own dust. It is a reasonable first move with a bag that feels cool and heavy, and it is not a promise that PINI or J Major will then burn for a set number of hours. Store the bag sealed, off a concrete floor. If the dust clumps, dry a small amount rather than tipping the sack into the maze. In this file only PINI prints a range, 0.3–1 mm. Which bag prints a grade is in the smoking dust buying guide.

Fill and light a generator

Tamp the dust so the channel is packed, leave the top of the maze visible, and light the sloped end rather than the middle. Wait about 5–10 minutes out of a draught. The ember should travel along the dust, not jump. Overfilling is what makes that jump. Dust with no stated grade gets the same cautious fill. Light it with a short candle, and take the candle out once the dust is smouldering. The food does not go in while an open flame is still in the box. ProQ quotes average burns of about 10 and 16 hours for its own generators, and it will not guarantee other brands' dust. Do not treat those hours as a result for the bags in this comparison. If the ember dies after a minute, dry the dust and refill.

Air in, smoke out, stay outdoors

A generator needs a small inlet and a way for smoke to leave. On ProQ's own unit the top vent is about 2 cm. Shut every opening and the ember starves. Open the lid to a gale and the dust flares or dies. Change one vent at a time. Thick, trapped smoke is what leaves a sooty taste. Do this outdoors. The London Fire Brigade says not to use a barbecue or a charcoal burner indoors, because of carbon monoxide. A closed garage is not a kitchen workaround. If the chamber goes above 21°C, ProQ says to take the food out and refrigerate it before you continue. That figure is theirs, not a universal cooking temperature. Bacon that needs cooking still needs cooking after a cold smoke.

A kettle, and the setup that failed

The review text describes a foil pouch, a foil tray, dust on pellets, a charcoal pit where very fine dust burned away, and a kamado that would not light. Those reviews name Naranjo orange dust, so they are evidence about fine dust as a fuel, not about hickory, whiskey or cherry flavour. A foil tray can hold a small pile off direct flame. It is still easy to overheat. Do not copy the kamado setup that failed. Five attempts with a bigger flame in a closed ceramic cooker are not a technique. Use a kettle only when the dust can smoulder, with the food above the heat. Cheese time and distance are on smoking dust for cheese.

Common questions

Why does it go out after a minute?
Damp dust, a channel packed above the walls, or a draught across the ember are the usual causes in the ProQ guidance. Dry a sample, refill below the maze top, and light it somewhere sheltered. A bag with no millimetre grade may also be too coarse or too fine for that generator, which a bigger flame will not fix.
Should I dry the bag first?
If it was stored in a damp place, or it clumps in your fingers, yes. ProQ's tip is about 30 seconds in a microwave, or around 90°C for about 30 minutes, then cooling. Dry a small amount first. Do not put hot dust straight onto a flame.
Can I do this in the kitchen or a garage?
No for the kitchen, and not for an enclosed garage either. Barbecues and charcoal burners indoors are a carbon monoxide risk, which is the London Fire Brigade's warning. Cold smoking with wood dust belongs outside, where smoke can leave and you can watch the temperature.
What if I only have a charcoal kettle?
Reviews in this file mention foil trays and foil pouches, and they also say very fine dust burns away on a charcoal pit. A foil tray can keep dust off direct coals, though it is easy to run the kettle too hot for a cold smoke. If the dust flares or vanishes, stop. Chunks or chips are the fuels those cooks are built for.
The dust will not light in a kamado. Is that normal?
One review in this file could not light fine dust in a kamado. Treat that as a failed setup, not as a method to repeat with a larger torch. Check dryness and grade, and use a generator or tray that can hold a smoulder. Do not keep lighting attempts going inside a closed ceramic cooker.
