How to use smoker pellets outdoors

Updated: 23 October 2026

The bag is in the kitchen, and the cooker in the garden may not match the packet. How to use smoker pellets depends on a Ninja smoke box, a tube on a gas barbecue, a pellet-grill hopper, or a pizza-oven fire. The same cylinders clog one of those and barely flavour another. This page is the feed, the light, and dry storage. It does not rank the bags on the [smoker pellets comparison](/hub/grill-accessories/smoker-pellets). Scoop limits are on [Ninja Woodfire pellets](/hub/grill-accessories/smoker-pellets/sub/smoker-pellets-for-ninja-woodfire). Three ways to feed the same bag

On a Ninja Woodfire the electricity makes the heat. Add one full scoop for flavour. Ninja’s UK hints put a session at about 30–90 minutes, and the 900 g listing claims up to 20 sessions. OG850UK tips say not to refill more than twice. Cold food takes smoke more readily than food you have already oiled. A hopper-sized load in the box is not the scoop the manual describes. On a gas barbecue the pellets go in a smoke tube, kept dry, with the lid down. UK BBQ Week’s soak is for chips. Fill the tube without packing, light an end, blow it out, and lay it flat. Water is how this fuel fails. A pellet grill feeds through the hopper and auger. The SmokeFire guide wants that cooker outdoors, on Weber hardwood, with no petrol. An Ooni Fyra starts with about 150 g, then little and often. Overfilling stalls the fire. Which bag belongs where is the buying guide.

Light it without a bottle of fuel

Light pellets with a long-nose torch or a firelighter that meets EN 1860-3. Weber’s SmokeFire guide and Ooni’s Fyra support both reject petrol, white spirit and lighter fluid. A bottle of fuel leaves a taste you cannot fan off, and it is the wrong start for a hopper that already has an igniter. If a box or a tube will not catch, use dry pellets and a proper lighter. Fill a tube so the pellets can breathe, light one end, blow the flame down to a smoulder, and lay it flat. For a cool Fyra, add a small handful. For a SmokeFire, use the igniter and the hardwood the manual names. A boiler sack is the wrong shortcut, and the reason is on heating pellets versus BBQ pellets.

Keep the pellets dry

Weber’s snap test is the quick check: a dry pellet breaks cleanly. A pellet that crumbles, bends, or feels soft has taken on moisture. Bin it for cooking, and do not feed it to the auger. Store the open bag indoors, off a concrete floor, with the top closed. A wet British shed turns hardwood into dust and steam. A damp or oversized pellet jams the feed. The auger strains and the fire drops. Switch the cooker off and let it cool before you clear the tube. Do not keep pressing the igniter on a hopper full of paste. Reviews on the small Exstream hickory bag also describe pieces too big for a hopper. That is size, not rain, and it still stops the feed. If the auger, controller or lead is damaged, call a repairer rather than forcing it.

Ash, creosote and where you stand

Empty ash only when the cooker is cold. Weber warns that creosote from a slow pellet fire can burn very hot if you disturb it while it is live. Put cold ash in a metal container outside. Keep the cook outdoors in moving air. HSE CAIS26 warns that a solid-fuel appliance in a tent or a gazebo can cause carbon monoxide poisoning. Headache, sickness or confusion while a cooker is under cover is an emergency: get into fresh air. Do not finish the cook in the garage.

Common questions

How do I add pellets on a gas barbecue?
Put dry pellets in a smoke tube, light one end, blow the flame down to a smoulder, and lay the tube flat with the lid closed. Do not soak them. UK BBQ Week’s soak is for wood chips. A maker’s 3–5 hours for a 30 cm tube is their timing, not your cook’s clock.
How full should a Ninja smoke box be?
One full scoop, for a session of about 30–90 minutes. OG850UK tips say not to refill more than twice. Up to 20 sessions from 900 g is Ninja’s claim. The pellets flavour the food. The element supplies the heat. A hopper-sized box fights that design.
How do I know the pellets are too damp?
Snap one. A dry pellet breaks cleanly. If it crumbles, feels soft, or will not light after a proper torch, it has taken on water. Close the bag and keep it indoors. Do not dry a suspect bag in the oven and then call it cooking fuel.
Can I use lighter fluid?
No. Weber’s SmokeFire guide and Ooni’s Fyra support rule out petrol and spirit. Use a long-nose torch or a firelighter marked to EN 1860-3. If dry pellets still will not catch, the bag is the wrong size or the wrong fuel. That is not a reason to add fuel from a bottle.
When do I empty the ash?
When the cooker is cold. Creosote from a long, cool pellet fire can ignite if you stir hot ash. Let a SmokeFire, a tube, a Ninja box and a hard-run pizza oven cool, then clear the pot into a metal bin outside. Hot ash in cardboard, or against a fence, is a fire after you think the cook is finished.
Can I do this in a gazebo?
Do not run a solid-fuel cooker in a tent or a gazebo. HSE CAIS26 is about carbon monoxide in that kind of enclosure. A Ninja still burns pellets, and a pellet grill or a Fyra is a solid-fuel fire. Cook in open air. Do not move the cooker into a closed garage to dodge rain.
